This August we were selected as a Finalist for StickerYou.com's "MAKE IT BETTER" Small Business Contest and we need your help to win! The prize package is valued at $10,000 worth of product & media promotion which would be extremely helpful to our small business. Our passion for Laurel, MS and small business in general is strong and we couldn't be where we are today without our communities support.
What will we do with this prize?
We plan to add new window clings to our shop to better showcase our business, order more product labels, (currently we get our Knight Sugar & Knight Rub labels from StickerYou!) & use the media promotion to our fullest abilities.
And now we do too! If you've joined our mailing list (which you should) you got an email earlier this week telling you all about our newest shop items! We now have FRESH USA Raised LAMB that we get in every other week. We've spent months looking for a fresh Lamb supplier and it was hard but we finally found one! These Lambs are raised in Texas and then sent to slaughter at our processor here in Summit, MS. This is the same USDA processor that breaks down our whole cow that we get from Honestly Beef (Collins, MS) and they do an excellent job. One of our main goals as a Butcher Shop is to provide our customers with the freshest meat possible and we believe we are doing just that. Wow, what an unbelievable first month of business that it has been. I know I say we are thankful 400 times a day but it's just the truth so I'm going to say it again... THANK YOU. You guys are showing us such support and love that it takes our breath away. It thrills us to see so many of you over and over again and when you tell us that the hamburger is the best you've ever had in your life we can't help but smile. This is our dream and we are so happy that you all are enjoying it so much.
Last Thursday we had our official Grand Opening/Ribbon Cutting event and the turn out whas phenominal. We had our Ribbon Cutting at 9AM that morning and then opened up shop for another busy day. There was a lot going on in downtown Laurel with the start of the Farmer's market, the Welcome Center opening, and Downtown Movie Night later that same day. It's going to be a fantastic summer in Laurel- I can just feel it!
We believe in excess over here. What's better than a pork chop? A STUFFED pork chop! What about a chicken breast? Yup, STUFF that too. Burgers? Let's get crazy and grind BACON and CHEESE into the meat. These are very important things that we BELIEVE in and it seems like a lot of you agree with us! Butcher Chad is continually rolling out new items and we've got even more coming for you now that our sausage stuffer has finally arrived! In the next few weeks we have some big things happening with the most exciting thing being our Grand Opening Event! We are nailing down times now but we will have a ribbon cutting on June 4th 2015 at the shop. I will post more information soon and until then here are some pictures to hold you over. After a couple of weeks working to get the shop ready we finally opened our doors on May 6th 2015! Today marks a week since our "soft" opening and things have been absolutely wonderful. We can't even express the gratitude and thanks that we have to everyone that has walked through our doors. Your enthusiasm and desire to support our small business has been overwhelming. It thrills us to no end to see a group of regulars already start to form. We have heard numerous times how the steak you bought from us is the best that you've ever had and that is exactly what we were aiming for. We can't seem to keep the Knight Jerky in stock so we've already ordered another dehydrator to ramp up production. The Knight Sugar fudge has been very well received too and I just love making it fresh every morning for you guys and hearing all of your requests for future batches. I was going to title this post "We came in like a wrecking ball" but I figured I'd keep it a little more straightforward. On Tuesday we finally got the keys to our building! It was a seriously fantastic and surreal feeling to have those keys in our hands. We had been waiting to get into this location for MONTHS due to the building being bought and sold and while both owners were going to rent to us we had to wait to find out who would be our landlord. Thankfully, everything worked out smoothly and we are now locked in! Chad and I both decided to enjoy the extra time off together because we knew that as soon as we got into the location work would start and not stop for hopefully many years to come. I honestly feel like God has been giving us exactly what we need during this entire process and I trusted that this down time was all in his perfect timing.

Can you believe it's already April?! This year seems to be flying by and I have to say we are extremely excited that April is finally here. This month is going to really kick us into gear. Soon, we should finally be able to get in the doors and begin work. Thankfully, the building doesn't need much of a facelift and we are anticipating opening quickly. It is our goal/hope that we can open our shop doors by the end of this month and at worst the beginning of May. We are so very excited to show Laurel what we can do and to get tasty meat onto your grills this Summer.

After weeks of getting asked, "WHERE are you going to be located?" we are ecstatic to now be able to announce our location! We have officially locked in 520 Central Avenue in Downtown Laurel, MS. Most of you may remember it as the old Signatures Coffee House, City Centre Crepes, or most recently Central Avenue Cafe. The building has had it's share of businesses come and go over the years but we hope that it will be a home to us for many years to come.
It has been so hard keeping this location a secret when we so desperately wanted to tell everyone but what's that saying, "Good things come to those who wait." Although, our family operates more on the side of, "Good things come to those who work their tails off." Either way, now that the location is locked in the next steps will be to get into the space and start setting it up for the shop opening. When we started planning on what we wanted our butcher shop to sell a few things came to mind. Most importantly we wanted to provide a quality product at an affordable price. We wanted to have custom items such as sausage, jerky, rubs, fresh deli meats, and really focus on giving the consumer something that they can't find in a regular grocery store. As our store model progressed we knew that the key factor for us would be our connection with the community. We want to sell you guys things that we want ourselves. Local products made and served with love. Friendly service is a top priority for us. We want to know your name and your family, we want to be apart of your lives and build those memories together through one of the most basic human needs: food.
