MEET THE BUTCHERS
Hi! We’re Chad and Terri Knight, the husband-and-wife team behind The Knight Butcher in Laurel, Mississippi.
Our story started long before we opened the doors to TKB. Chad is a Laurel native, while Terri grew up in Florence, Mississippi. We met while Terri was attending The University of Southern Mississippi and Chad was working in the meat industry in Laurel and playing music on the weekends. We married and, in 2011, packed up and moved more than 2,000 miles away to Seattle, Washington.
That move ended up shaping our future in a way we never expected.
While in Seattle, Chad worked in small, independently owned butcher shops where he expanded his knowledge of specialty cuts, whole-animal butchery, sausage making, curing meats, charcuterie, and the operation of a neighborhood butcher shop. What had already been his career became a passion—and eventually a dream of owning a butcher shop of his own.
Meanwhile, Terri was building a career in sales, marketing, and customer relations and realized that Chad’s dream was something they could build together.
After three and a half years in Seattle, we knew it was time to come home. In January 2015, we moved back to Laurel and began building what would become The Knight Butcher.
BUTCHER CHAD
Chad has spent more than 30 years in the meat industry. He began his career after studying Meat Processing and Merchandising at Jones County Junior College and has experience ranging from grocery meat departments and management to Journeyman Meat Cutter and specialty butcher shops in the Pacific Northwest.
Today, most people simply know him as Butcher Chad. His passion is still the same: sourcing great meat, cutting it right, sharing his knowledge, and helping customers leave with something they’re excited to put on the grill.
TERRI
Terri graduated from The University of Southern Mississippi in 2009 with a bachelor’s degree in Sociology and brought her background in sales, marketing, and community involvement into TKB. Today, as TKB’s Creative Director, she helps shape nearly every part of the brand—from marketing, new products, events, and social media to customer experience and community partnerships. Terri has a passion for people and believes customers deserve to know where their food comes from, understand what they’re buying, and feel good about serving it to their families.
THE KNIGHT BUTCHER TODAY
More than a decade after moving home to chase this dream, The Knight Butcher has become more than we ever imagined.
We remain a locally owned husband-and-wife business with quality at the center of everything we do. We proudly sell USA-raised meats and work with trusted suppliers to offer exceptional steaks, premium beef, pork, poultry, American Wagyu, specialty cuts, house-made products and more.
TKB has also grown beyond the butcher counter with our all-day lunch menu, specialty burgers, prepared foods, beef jerky, fudge and sweets, gourmet goods, catering, online ordering and shipping, community events—and plenty of other ideas we probably haven’t dreamed up yet.
But the heart of TKB hasn’t changed. You’ll still find Chad behind the butcher counter. You’ll still find Terri dreaming up whatever we’re going to do next. And we’re still working toward the same goal we had when we came home to Laurel: To build a butcher shop our community can be proud of, provide food we would proudly serve our own family, and give back to the place that gave us the opportunity to make this crazy dream a reality.
