Hi, we are thrilled you're here to learn more about Laurel's very own Butcher shop! The Knight Butcher, LLC. is owned and operated by Chad and Terri Knight. Chad is a native of Laurel, Mississippi, and Terri hails from Florence, Mississippi. While Terri was attending college at The University of Southern Mississippi, Chad was working for a local grocery store in Laurel and playing music on the weekends. They eventually met, got married, and moved to Seattle, Washington, in 2011. After three and a half years in Seattle, they decided that they missed living in Mississippi and being close to their family and friends. During the time they lived in Seattle, Chad worked for several small butcher shops, and his passion grew to own his own butcher shop one day. Terri worked in sales, and the desire was placed in her heart to help her husband's dream come true. After a lot of planning, they were ready to move back to Laurel, Mississippi, in January of 2015 and start the biggest endeavor of their life: The Knight Butcher. 

 

Chad has been in the meat industry for over 20 years, with a wide range of experience, from grocery store management to lead Journeyman. Right after high school, Chad took Meat Processing and Merchandising at Jones County Junior College and then started his career in various grocery markets. While in Seattle, Chad worked for several small butcher shops and developed many new skills to add to his repertoire such as: charcuterie (sausage making, curing meats, etc.), business management, class tutorials on different animal breakdowns, and much more.

 Terri graduated USM in 2009 with a BA in Sociology and has worked in sales her entire life. With her business knowlege, she will be the public relations and business marketing manager. Terri has a passion for people and helping them to better understand the food that they are buying for their families. Together, she and Chad hope to give back to the city they love and give the people of Laurel a fresh and local product that they cannot get at any other store in town.

Chad Knight

Owner/Butcher

Not only does he serve up the best cuts of meat in town he's a Reggae-Rock singer/songwriter, lover of movies (especially Horror), VHS tape fanatic, Knight Features Creator, and an avid toy collector. He's married to the bossiest girl in town and dad to two tiny Pomeranian's. Some people say he looks like Dean Ambrose and he'll gladly agree. He could live off of Chips & Queso from Los Primos Mexican Resturant and Mt. Dew is his go to soft drink. If he's not at the shop working you'll find him playing a gig with his band (Chad Knight Band) or at home watching movies and he wouldn't have it any other way. Well, ok he'd rather be at the beach in all honesty but someone's gotta stay in town and feed the rest of us.

Terri Knight

Owner/Fudge Queen

People are her favorite. She's involved with several community organizations such as: Laurel Main Street, Jones County Chamber of Commerce, & the Laurel Arts League just to name a few. But she hadn't even been to Jones county until 2007 when she met a Rock-star named Chad Knight. He rocked her world, married her, and together they formed an unstoppable team. She loves to travel and considers herself a pizza connoisseur. She loves to cook and create which leads to the many different Knight Sugar offerings you can find at the shop. Marketing and Social Media play a huge part of what she does as well and while you won't always find her in store she's behind the scenes taking care of business. She enjoys laying by the pool, playing with her two Pomeranian's, and walking the Historic streets of Downtown Laurel. When she's not working she's probably at home binge watching something on TV or out shopping for home decor.

Sir Loin

Mascot

He lost his arm in battle in 1836 but that hasn't stopped him. He was rescued from a dire situation when Terri found him lying pitifully on the ground after the wind had blown him over and decided that he belonged at the butcher shop. He spends his days and nights guarding the shop and loves taking pictures with visitors. Just don't bring up his missing hand... it's still a touchy subject for him.
